Mexican Shrimp Tacos are the PERFECT Cinco De Mayo Dish to serve for a PARTY or just for a FAMILY dinner!!

Anyone who knows me for more than 5 minutes knows my favorite kind of food is MEXICAN FOOD! I think I could eat breakfast tacos in the morning, taco salad for lunch, and of course, some shrimp tacos for dinner!!!

I live in an area where tacos and Mexican food are pretty much on every street corner. We have our favorite places and my husband has gotten addicted to SHRIMP TACOS (me too for that matter) from our favorite place in town where they specialize in just tacos, hence the name of the place MAD TACO! So, I decided to come up with my own version of shrimp tacos for my husband the other week, and he told me these are now his favorite SHRIMP TACOS! I promise he’s not the type to sugar coat things if he likes or doesn’t like a meal of mine. He’s kind of a food snob, which works because so am I.

Gathering ideas to make these PERFECT MEXICAN SHRIMP TACOS I knew I had to get fresh tortillas made from the store, (Yes, they make homemade tortillas in the grocery stores around here.) Then I grabbed store bought pico de gallo just to cut down on the time to make these and large shrimp that was already frozen because I wanted my shrimp to be already peeled and deveined. I thawed the shrimp in a strainer under cool water until they were no longer frozen then I patted them dry.

Ya’ll, I knew my Mexican Shrimp Tacos had to have a shrimp sauce, so I came up with the idea of mixing the seasonings I used for the shrimp to make one. I used mayonnaise and Greek yogurt as the base and then added the seasonings and a touch of lime juice. It tasted great but just needed a punch of something…..CAYENNE PEPPER!!! Then it was perfect!!!! I like to make the shrimp sauce first because all the flavors come together as it sits in the refrigerator while you make the tacos.

Everything else comes together quickly, grill the corn on the cob, cook the shrimp, and make the guacamole!!

Mexican Shrimp Tacos

  • Prep Time: 20m

Mexican Shrimp Sauce

  • 2 tbsp. Mayonnaise
  • 2 tbsp. Greek Yogurt or Sour Cream
  • 1/4 tsp. Chili Powder
  • 1/4 tsp. Cumin
  • 1/4 tsp. Garlic Salt
  • 1/4 tsp. Onion Powder
  • A dash of Cayenne Pepper (or to taste)
  • 1/4 Lime, juiced

Shrimp Tacos

  • 2 lb Shrimp, large uncooked, peeled and deveined
  • 1/4 tsp. Chili Powder
  • 1/4 tsp. Garlic Salt
  • 1/4 tsp. Cumin
  • 1/4 tsp. Paprika
  • 1 tbsp. Oil (Peanut Oil, Sesame Oil or Olive Oil)
  • 1 Ear of Corn, fresh if possible
  • 1 Can of Black Beans
  • 1 Container of Pico De Gallo
  • 8 Tortillas
  • 2 Avocado
  • 1/2 c Shredded Mexican Cheese
  • 1/2 Lime


The Shrimp Sauce:

  1. Whisk all the ingredients together in a bowl and squeeze 1/4 a lime into the mixture as well. Place in refrigerator so all the flavors will merry.

Shrimp Tacos

  1. Warm the black beans on the stove and grill the ear of corn until all sides are charred. (I do this on a gas burner.) Let the corn cool and then cut the corn off the cob with a sharp knife.
  2. Toss the shrimp with cumin, chili powder, paprika, and garlic salt. In a large skillet or wok heat 1 tsp of oil of your choice on medium-high heat. Working in batches add shrimp (make sure you don’t crowd the pan). Cook shrimp 2 minutes per side or until done. Squeeze half a lime over the top once they are done.
  3. While the shrimp is cooking make guacamole (I usually add salt, cumin chili powder & onion powder and a squeeze of lime.)
  4. Warm tortillas on grill or gas burner to get a small char on tortillas.
  5. Making the Shrimp Tacos: warmed tortilla, shrimp sauce, shrimp, beans, corn, cheese, pico de gallo, and avocado
