I cannot tell you about how excited I am about these Healthy Banana Pancakes they are fluffy & delicious and smell just like banana pudding!! These pancakes are so yummy that I usually make a huge batch at a time so I can eat on them all week!!
I’ve actually been making these or something similar to these for about 4 years now. Originally the recipe came out as 2 ingredient (banana and egg) pancakes all over Pinterest and I jumped on that band wagon! Then soon after I saw them as 3 ingredient pancakes with oats added. Its was healthy and a pancake and I loved it!
Over the years I have changed a few things like instead of whole oats, I would grind them in a blender with a milling blade (it’s 2 blades instead of four). Or you can just buy oat flour…same thing; ground up oats. I actually stayed with this pancake for a while. It tasted good but it was flat as a pancake (no pun intended).
Then I decided to add vanilla for flavor, Greek yogurt for texture (and of course the health benefits), baking powder to make them fluffy and walnuts because I love nuts and hey, that’s extra protein and good fat. Maybe I should be calling these SUPER HEALTHY BANANA PANCAKES!?!?!
