Healthy Banana Pancakes

I cannot tell you about how excited I am about these Healthy Banana Pancakes they are fluffy & delicious and smell just like banana pudding!! These pancakes are so yummy that I usually make a huge batch at a time so I can eat on them all week!!

 

I’ve actually been making these or something similar to these for about 4 years now. Originally the recipe came out as 2 ingredient (banana and egg) pancakes all over Pinterest and I jumped on that band wagon! Then soon after I saw them as 3 ingredient pancakes with oats added. Its was healthy and a pancake and I loved it!

Over the years I have changed a few things like instead of whole oats, I would grind them in a blender with a milling blade (it’s 2 blades instead of four). Or you can just buy oat flour…same thing; ground up oats. I actually stayed with this pancake for a while. It tasted good but it was flat as a pancake (no pun intended).

Then I decided to add vanilla for flavor, Greek yogurt for texture (and of course the health benefits), baking powder to make them fluffy and walnuts because I love nuts and hey, that’s extra protein and good fat. Maybe I should be calling these SUPER HEALTHY BANANA PANCAKES!?!?!

Healthy Banana Pancakes

Ingredients

  • 2 Eggs
  • 1 tbsp. Butter
  • Pinch of salt
  • 1/2 c Walnuts
  • 2 tsp. Vanilla
  • 2 tsp. Baking powder
  • 1/4 c Greek yogurt
  • 2 c Oats
  • 3 Bananas
  • Powdered Sugar for dusting (Optional)

Instructions

  1. First grind up your oats in a food processor, I let it go for 30 seconds to make sure you have made oat flour. Pour oats in separate bowl and add salt & baking powder whisk together and sit aside.
  2. Then drop the peeled bananas in the processor and blend until liquid, then add eggs, yogurt, vanilla to pureed bananas and blend until well blended.
  3. Pour oat flour mix back in the food processor and blend until well combined. Then add chopped walnuts and pulse a few times to get it blended together.
  4. Heat a large non stick skillet on medium-high heat while you are blending ingredients. Then add the butter to skillet and move it all over the pan to make sure it has coated the skillet.
  5. Ladle or use an ice cream scoop to scoop batter into the skillet and cook 3 mins per side or until golden brown.
